Meatballs are a natural with spaghetti.  This recipe uses the same approach as Shar’s meatloaf recipe.  Combined with a good spaghetti sauce, it creates a totally different meal. Most people would fry the meatballs in a little oil, but baking them in the oven is probably a little healthier, and it definitely makes the process easier.

  • 1 1/2 lbs. Hamburger
  • 1/2  Onion
  • 1/3 Cup Breadcrumbs
  • 1/2 teaspoon Thyme
  • 2 Tablespoons Ketchup
  • 1 Egg
  • salt and pepper to taste
  • Onion soup mix, half package

Break the egg into a large bowl and mix in the 1/2 package of onion soup mix. Stir in the chopped onion, thyme, salt and pepper, and ketchup.  Break hamburger into small chunks and mix by hand with the onion mixture.  Add bread crumbs and knead just until mixed evenly. Do not over work the meat.

Bake at 375 degrees for thirty minutes. Boil some spaghetti and add some prepared sauce. meatballs4

Delicious. And we get two meals from the sixteen meatballs.
